Apple Cinnamon Loaf


Came across the recipe of Apple Cinnamon Loaf on Facebook and decided to give it a try, as I've recently getting quite obsessed with cinnamon. Apple & cinnamon do look like a very good combination, isn't it?

So, here goes the end product & recipe.




Apple Cinnamon Loaf

INGREDIENTS :
1/3 cup brown sugar
1 teaspoon ground cinnamon
2/3 cup castor sugar
1/2 cup butter, softened
2 eggs (Grade A)
1 1/2 teaspoons vanilla essence
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk
1 apple, peeled & chopped
DIRECTIONS :
  1. Preheat the oven to 350 degrees.
  2. Grease & flour a 9x5 inch loaf pan.
  3. Mix brown sugar & cinnamon powder together in a bowl & set aside.
  4. Beat white sugar & butter together in a bowl using an electric mixer until smooth & creamy.
  5. Beat in eggs, 1 at a time, until incorporated; add vanilla essence.
  6. Sift flour & baking powder together in a bowl, then stir into the creamed butter mixture, then mix milk into batter until smooth.
  7. Pour half the batter into the prepared loaf pan, then, add half of the chopped apple & half of the brown sugar & cinnamon mixture; lightly pat apple mixture into the batter.
  8. Pour the remaining batter over apple layer, then top with the remaining apples & the rest of the brown sugar & cinnamon powder, swirl the mixture using a spoon.
  9. Bake in the preheated oven until a toothpick inserted in the center of the loaf come out clean, about 50-60 minutes.
