Macaroni & Cheese Cupcakes




Macaroni & Cheese Cupcakes

Ingredients :
  • Cooking spray (or butter/ margarine to oil the muffin pans)
  • 2 cups dried bread crumbs, divided
  • Olive oil, for drizzling
  • 6-8 slices of bacon (or more), chopped (may replace with other meat as preferred)
  • Salt & pepper for seasoning
  • 8 oz small pasta, such as pennette, shells, or elbows
  • 2 cups grated Parmesan cheese
  • 1 1/2 cups grated Cheddar cheese
  • 2 cups chopped frozen mixed veggies (or any veggies of your choice)
Directions :
  1. Preheat the oven to 180C.
  2. Spray 2 12cups muffin pans with cooking spray (or oil with butter/ margarine)
  3. Coat each of the muffin cup with bread crumbs.
  4. Pan fry the bacon until just cooked (not crispy). Drain with kitchen towel & set aside.
  5. Meanwhile, cook the pasta in a pot of salted water until al-dente (follow the instructions on the packaging)
  6. Drain the pasta & add to a large bowl. Stir in the bacon & the cheeses. Season with salt and pepper.
  7. Spoon the pasta mixture into the muffin pans, about 2/3 full. Arrange some mixed vegetables (or veggies of your choice) into each cup. 
  8. Top with a thin layer of the remaining bread crumbs & drizzle with olive oil.
  9. Bake until golden brown, about 15 to 20 minutes. Let cool for a few minutes & carefully unmold with a spoon onto a serving platter.
