Butter Chicken


Butter Chicken
Serves 3-4

Ingredients :
  • 2 chicken whole legs, cut into bite size
  • Oil for deep frying
  • 2 tablespoons butter
  • 2 tablespoons curry leaves
  • 100ml evaporated milk
  • Optional : frozen mixed veggies
  • Optional : 1 teaspoon chopped chili padi
Marinate:
  • 1 egg
  • ½ teaspoon salt
  • 1 tablespoon corn flour
  • 1 tablespoon plain flour
Seasoning:
  • ½ teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon curry powder
Directions :
  1. Marinate the chicken for at least 30 minutes.
  2. Deep fry in hot oil until golden brown & cooked. Dish & drain.
  3. Melt butter in a pan, sauté curry leaves & chili padi until fragrant, then, add in evaporated milk & seasoning, bring to the boil.
  4. Add in chicken & mixed veggies, stir-fry at medium heat until well mixed.
  5. Dish up & serve.
