Caramelized Pork Belly with Potatoes


Caramelized Pork Belly with Potatoes
Serves 2

Ingredients:
  • 1 stripes of pork belly
  • 1 large / 2 medium size potato(es), cubes/ slice
  • A pot of hot water, with a pinch of salt 
Seasoning :
  • 4 tablespoons light soy sauce
  • 2 tablespoons brown sugar
  • 1-2 teaspoons dark caramel soy sauce (may use dark soy sauce)
Directions :
  1. Wash the potatoes clean & boil (with skin on) in hot water for about 8-10 minutes, until barely tender, drain, set aside.
  2. While the potatoes are cooking away, slice the pork belly (with/ without skin on, as preferred) to about 1/2 inch thick.
  3. Remove the potatoes skin, using a wok, fry the potatoes.
  4. Remove the potatoes from wok & drain the oil using kitchen towel, set aside.
  5. Leaving enough oil in the wok, pan fry the pork belly, for about 5 minutes, or until cooked.
  6. Put the potatoes back in the wok, together with the pork belly. Add the seasoning. When the brown sugar starts to caramelized, mix them all well.
  7. Serve immediately.
