Egg Pizza ~ with Bacon, Red Bell Pepper, Onions, Corn & Carrots


Egg is one of my favorite food, I eat it in whatever ways it's cooked, I can eat eggs for all 3 meals a day & has zero complaints about it.

This egg pizza idea was inspired by a mummy on a Facebook forum some time ago, I have previously made a simpler version of egg pizza as breakfast & instantly fell in love with it. Today, I gave it a little twist, & changed the topping with some other ingredients since my 1st trial was a success.

No salt was used in making this pizza, as the bacon & cheese themselves are flavorful enough, but if you like your food to be more on the salty side, feel free in adding salts when you make this.

This egg pizza is suitable to be made as either breakfast, lunch, tea time snack, or even dinner. You may change the ingredients for the topping with your favorite ingredients. I love mushroom on my egg pizza but I ran out of mushroom & so I made do with other ingredients today.

I hope you enjoy this dish as much as I do. My little boy likes this a lot & he himself alone finished half of the pizza. I'm a happy mama.


The ingredients that you'll need : eggs, carrot, red bell pepper, bacon, onion, & corn
You'll also need : freshly ground pepper, cheese, mayonnaise & dried parsley (optional)

Crack the eggs into a bowl, season with freshly ground black pepper, & add a teaspoon of mayonnaise (optional). Beat with a fork & set aside for later use.
Pan fry the bacon until half cooked.

Then, saute the onions, until the onions turn light brown color. 

Mix the bacon & onions together with shredded carrots, red bell pepper, & corn.

Mix these together with a fork until well combined.

Pour the egg mixture on a pan & cook on low heat.

Sprinkle the filling evenly on top of the egg. Top with shredded cheese & dried parsley.

Close the lid to let it continue cooking, about 5-6 minutes.

The cheese is melting, I love this part most!

You can eat it straight, just like eating a pizza, or serve together with a bowl of rice/ noodles. Either way, it's yummy.

This is for my little boy, he ate 2 of these & told me it's yummy.

Ingredients :

2 eggs
4 slice of bacon, thinly slice
1 small carrot, shred
1 big / 2 medium size onions, thinly slice
Corn (I used frozen corns)
Freshly ground black pepper
1/2 cup Cheese (any type as preferred), shred
Dried parsley
Optional : 1 teaspoon of mayonnaise

Directions :
  1. Crack the eggs into a bowl, mix the mayonnaise & freshly ground black pepper, beat with a fork. Set aside.
  2. Pan fry the bacon until half cooked, then saute the onions, until the onions turn light brown color.
  3. Mix the cooked bacon & sauteed onion together with shredded carrots, red bell pepper, & corn.
  4. Pour the egg mixture on a pan & cook on low heat.
  5. Sprinkle the filling evenly on top of the egg. Top with shredded cheese & dried parsley, & close the lid to let it continue cooking, about 5-6 minutes.
  6. Dish up & serve.
