Lobster Chowder


Lobster Chowder

Ingredients :
  • 4 medium size potatoes, peeled & diced
  • 1/2 cup butter
  • 3 onions, chopped
  • 4 slices of bacon, chopped
  • 1 cup diced celery
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1/4 cup all-purpose flour
  • 1 tablespoon Italian seasoning
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 11 ounce lobster meat, cut into bite-size pieces
  • 2 (385 ml) cans evaporated milk
  • Optional : 1/4 cup chopped fresh parsley, for garnishing
Directions :
  1. In a large saucepan, bring 4 cups water to a boil; add potatoes & cook for 15-20 minutes or until tender. 
  2. In a skillet, melt 1/4 cup of butter over medium heat. 
  3. Add bacon, onions, celery & peppers, cook, stirring occasionally, for about 10 minutes or until softened. 
  4. Sprinkle with flour, herbs, salt and pepper, cook for 2 minutes & add to the potato mixture. 
  5. In the same skillet, melt remaining butter over medium heat. 
  6. Add lobster, cook, stirring for 4 minutes. 
  7. Add evaporated milk; stir over medium heat for 10 minutes or until heated. 
  8. Garnish with parsley & serve.
