Mango Coconut Jelly Cake


Mango Coconut Jelly Cake

Ingredients :
250ml milk
100ml coconut milk
60gm castor sugar
25gm gelatin powder
1 fresh mango
100ml water
Directions :
  1. Puree 2/3 of the fresh mango, & cut the rest into cubes, combine both in a bowl.
  2. Mix the gelatin powder & castor sugar in a pot with 100ml of water & let it simmer under low heat, stirring constantly to prevent burning.
  3. Once the gelatin & castor sugar are melted, stir in the milk & coconut milk, & continue to simmer under low heat.
  4. Leave to cool a little & mix with the mango mixture & then pour into mould. 
  5. Chill in the fridge for a few hours or until it’s set.
