Steamed Pomfret with Thai Fish Sauce

Ingredients :
  • 1 pomfret  
  • Spring onion, to garnish
Thai Fish Sauce :
  • 2 stalk spring onions, chopped 
  • 1/2 to 1 red chili, depending on how spicy you preferred (I substituted with chili powder as i didn't have chili at home) 
  • 3 kaffir lime leaves
  • 6-7 cloves garlic (may reduce as preferred) 
  • 1 tablespoon lemon or lime juice 
  • 2 tablespoons fish sauce 
  • 1/2 cup fresh basil (I substituted with dried basil) 
  • 4 tablebspoons of virgin coconut oil
  • 1 teaspoon butter 
  • 2 tablespoons soy sauce
Directions :
  1. Steam the fish for 10-15 minutes (depending on size, until cooked)
  2. While waiting for the fish to be cooked, prepare the thai fish sauce.
  3. Blend all the ingredients of the thai fish sauce, then pour the sauce into a sauce pan & gently heat up.
  4. Pour it over the fish, garnish with spring onion & serve.
