Stir Fry Egg Plant ~ with Minced Meat, Garlic, & Dried Shrimps



This is a dish that many would order when they dine in a Chinese restaurant, it's actually very simple to be cooked at home (at a low cost too). I love to have this together with my rice, even my little boy ate a little extra today because this dish is simply delicious.




* Step-by-Step Cooking Tutorials *

The ingredients you'll need : sesame oil, fish sauce, Shaoxing wine, salt, oyster sauce, soy sauce, sugar, egg plants, minced meat, garlic, & cili padi (optional)

You'll also need : dried shrimps & white pepper

Marinate the minced meat for at least 15 minutes.

Slice the egg plants

Heat up the wok, fry the egg plants in the hot oil, until both sides turn golden brown, dish, & transfer to kitchen towel to drain.

Leave a little bit of oil in the wok, fry the minced meat until slightly brown, dish, set aside.


Saute the garlic & dried shrimps until fragrant, do not brown.

Add in cili padi (optional).

Put the egg plants & minced meat back into the wok & mix well with the seasoning. Turn on to high heat & let it boil. Then, turn to low heat to let it simmer for a few minutes.

Dish up & serve. Enjoy!

Ingredients :
2-3 egg plants, sliced
3-4 cloves garlic, chopped
1/2 tablespoon dried shrimp, chopped
100gm minced meat 
Oil for frying
Optional : 1-2 cili padi, chopped

Marinate :
1/2 tablespoon Shaoxing wine
1 teaspoon sesame oil
1/2 teaspoon soy sauce
Dash of white pepper

Seasoning :
2 tablespoon oyster sauce
1 teaspoon fish sauce
1/2 cup water
1/2 tablespoon sugar
Dash of salt & pepper

Directions :
  1. Marinate the minced meat for at least 15 minutes.
  2. Combine all the seasoning in a bowl, set aside.
  3. Heat up the wok, fry the egg plants in the hot oil, until both sides turn golden brown, dish, & transfer to kitchen towel to drain. (Note : the egg plants adsorb the oil very well, so you might need a bit more oil for this step)
  4. Leave a little bit of oil in the wok, fry the minced meat until slightly brown, dish, set aside.
  5. Saute the dried shrimps & garlic until fragrant, do not brown.
  6. Put the egg plants & minced meat back into the wok & mix well with the seasoning. Turn on to high heat & let it boil. Then, turn to low heat to let it simmer for a few minutes.
  7. Dish up & serve.
