Stir Fry Lotus Root ~ with Garlic & Dried Shrimps


I love lotus root with peanut & ribs soup, but do you know that other from boiling soup with lotus root, you can also use it to make some other dishes, for example, stir fry? 

We've tried out a few stir fry lotus root at a few restaurants & really like it, especially my C-boy, he could easily eat a bowl of it all by himself.

There are many ways of cooking it, today I'm gonna try the simplest way of all, to saute with garlic & dried shrimps. It taste good, best to eat together with rice, but if you would like to eat it just like a snack, please go ahead. I did that. 


Step-by-Step Cooking Tutorials :


Ingredients you'll need : lotus root, water, egg, sesame oil, oyster sauce, salt & pepper, cornflour, sugar, & abalone sauce (optional).

You'll also need : curry leaves
 
Slice the lotus root, & soak in hot boiled water for 5-10 minutes.


Combine all the ingredients of marinate in a zip lock bag.

Beat with a fork.

Drain the lotus root thoroughly.

Place the lotus root in the zip lock bag with the marinate.


Marinate the lotus root for 30 minutes.


Combine all the ingredients for gravvy in a bowl, set aside.

Heat up the wok, deep fry the lotus root (by batches, to save oil), until both sides turn golden brown.

Transfer to kitchen towel to drain.

Saute the garlic & dried shrimps until fragrant, slightly browned.

Add in cili padi (optional).


Add in curry leaves & stir fry for another minute.


Pour the gravvy mixture into wok, turn to the boil.

Lower the heat, & put the lotus root back into the wok.

Combine the lotus root & gravvy, mix well.

Dish & serve. Enjoy.

500gm lotus root, sliced
3 tablespoons minced garlic
1 tablespoon dried shrimp, chopped
Oil for frying
Optional : 1-2 cili padi, chopped

Marinate :
1/2 teaspoon salt
1 egg
1 tablespoon corn flour
1 teaspoon sesame oil
Dash of pepper

Gravvy :
1 tablespoon oyster sauce
1 teaspoon soy sauce
1 teaspoon abalone sauce
1 tablespoon sugar
1 teaspoon sesame oil
Dash of pepper
100ml water

Directions :
  1. Slice the lotus root, & soak in hot boiled water for 5-10 minutes. Drain & set aside.
  2. Combine all the ingredients of marinate in a zip lock bag (or a bowl, your choice), beat with a fork.
  3. Place the lotus root in the marinate bag & marinate for 30 minutes.
  4. Combine all the ingredients for gravvy in a bowl, set aside.
  5. Heat up the wok, deep fry the lotus root (by batches, to save oil), until both sides turn golden brown. Transfer to kitchen towel to drain.
  6. Saute the garlic & dried shrimps until fragrant, slightly browned.
  7. Add in the cili padi (optional) & curry leaves & stir fry for another minute.

  10. Combine the lotus root & gravvy, mix well.
