Cheesy Chicken, Mushroom, & Broccoli Bake


This is one simple dish that is quick to cook, & taste very good too. It was one of the regular dish that I would bring to a playgroup & family gathering, so far I have heard nothing but some good reviews about it. 

I made a few changes from the original recipe by adding mushrooms into the dish (& I'm loving it), & used chicken thigh instead of chicken breasts (feel free to choose either one, it's a personal choice, some people fancy one over the other), also I've used lime juice instead of lemon juice, it all depends on what do I have in my kitchen at the point of cooking. 

I was inspired by this recipe I stumbled upon on food.com (I believe so), unfortunately I have failed to locate the original source of this recipe.
  


The creamy & cheesy texture of the chicken, together with the broccoli & mushrooms makes it an irresistible dish that you would want to eat over & over again.




Cheesy Chicken, Mushroom, & Broccoli Bake

Serves 5-6 

Ingredients :
2 boneless chicken thigh / breasts (as preferred), cut into bite-sized
1/4 teaspoon freshly ground black pepper
Oil
1 stalk of broccoli, chopped
1 pack of button mushroom, thinly sliced/ chopped
1 cup grated cheddar cheese (or any cheese as preferred)
 
Gravy :
1 can Campbell Cream of Chicken
1/2 cup mayonnaise
1 teaspoon curry powder
1 teaspoon lemon/ lime juice


Directions :
  1. Preheat the oven at 180C.
  2. Mix all the ingredients of gravy in a bowl & set aside.
  3. Sprinkle the chicken with pepper & pan fry until barely cooked, about 6 minutes, drain.
  4. Saute the mushrooms.
  5. Blanch the broccoli.
  6. Arrange the broccoli at the bottom of a oven-proof glass dish, then layer the saute mushrooms on top of the broccoli, follow by the chicken.
  7. Pour the gravy over chicken & sprinkle the cheese on top.
  8. Bake in the preheated oven for 30-35 minutes.
