Ice Cream Sandwiches


Haven't been cooking/ baking in my kitchen for a while now because of the water rationing issues. Today I've decided to make something simple for tea time, that would not require much washing. These are so simple & easy to be made & very sinful too.
 
Step-by-Step Cooking Tutorials :

The ingredients you'll need : ice cream, sea salt, chocolate chunks, cheese crackers, & virgin coconut oil (optional).
 
Use a mini ice cream & place a small scoop of ice cream on the centre of the crackers.
 
Gently press another cookie on top, so they don't crack.
 
Hmm, I haven't been too gentle have I? But it's ok, the chocolate dipping will save the cracking.
 
Place them in the freezer for at least 4 hours or overnight to set.
 
Melt chocolate chunks & coconut oil in a double boiler or microwave, stir until the chocolate is fully melted & is off smooth texture, be very careful with the temperature,  DO NOT overcooked your chocolate otherwise they will be difficult for dipping. My chocolate is a little overcooked but that's ok, they taste equally fine.
 
Dip half of the frozen ice cream crackers into the melted chocolate, & immediately sprinkle with a little sea salt.
The chocolate dry up pretty quickly. Send them back into the freezer for another hour or so before serving.

Sea salt
Extra virgin coconut oil
