Jelly Sponge Cake ~ Twinkle Twinkle Little Star


Today is my little baby's birthday, he turns 1 year-old TODAY!!!!

I know, his birthday celebration has started 2 weeks ago, but it just never seems to be enough, there are just so many things I planned to do for him to celebrate his BIG ONE! 

Here, I bake (okay non-bake) him another cake, so we can have a small cake cutting session at home.

I made this last night when both the boys finally went to their dreamland & set this in the fridge overnight, we cut the cake this morning before papa went to work.

This cake is delicious with a mix of jelly & sponge cake, I have slightly reduced the sugar a little bit from the original recipe. The taste is just nice.



Step-by-Step Tutorials :

Grease & flour a 7 inch baking pan.

Place the eggs into the mixing bowl, whisk on high speed until foamy. Add in the sugar. Whisk the mixture until very light & fluffy.


Sift the flour into the mixture.

& fold them in one direction, gently.

Mix in melted butter in one direction, gently. DO NOT over-mixed.

Pour batter into the baking pan & bake in the preheated oven for 30-35 minutes or until a skewer in the center comes out clean.

Lay on a wire rack to cool completely.

Place ingredients A in a pot, bring to a boil & lower the heat, keep stirring until the agar-agar powder has fully dissolved.

Divide the agar-agar mixture into 3 portions & pour into 3 different containers.
Add 3 of the food coloring of your choice into each portion. Leave to set.

Once the jelly has set, cut the jelly with a mini star shape cookie cutter.
Place the star shape jelly into a 9 inch baking pan. Spread them evenly.

Drain the fruit cocktail & reserve the juice.

Place ingredients B in a pot, bring to a boil & lower the heat, keep stirring until the agar-agar powder has fully dissolved.

Scoop about 1/3 portion of the agar-agar mixture to cover all the stars & leave to 3/4 set.

Sprinkle with mixed cocktail on top.
For the remaining agar-agar mixture, mix in ingredients C & pour all over the mixed cocktail.

Finally, place the sponge cake in the middle of the cake & leave to set in the fridge, preferably overnight.

50gram castor sugar
60gm all-purpose flour, sifted
1.5 tablespoons melted unsalted butter

Directions :
  1. Preheat the oven to 180C or 160C fan forced.
  2. Grease & flour a 7 inch baking pan.
  3. Place the eggs into the mixing bowl, whisk on high speed until foamy. 
  4. Add in the sugar. Whisk the mixture until very light & fluffy.
  5. Sift the flour into the mixture & fold them in one direction, gently.
  6. Mix in melted butter in one direction, gently. 
  7. DO NOT overmixed.
  8. Pour batter into the baking pan & bake in the preheated oven for 30-35 minutes or until a skewer in the center comes out clean.
  9. Lay on a wire rack to cool completely.
 
Jelly

Ingredients (A) :
1 tablespoon agar-agar powder
70 gram castor sugar
400ml water
100ml coconut milk
1/4 teaspoon salt
Few drops of 3 different food coloring (of your choice)

Ingredients (B) :
2 tablespoon agar-agar powder
140 gram castor sugar
530ml water + cocktail juice (about 270ml)

Ingredients (C) :
100ml coconut milk
1/4 salt
Few drops of green food coloring
 
Ingredients (D) :
1 can of mixed fruit cocktail
 
Directions:

  1. Place ingredients A in a pot, bring to a boil & lower the heat, keep stirring until the agar-agar powder has fully dissolved.
