Roasted Garlic Macaroni & Cheese



Mac & cheese is one of my favorite dishes, I'm constantly looking for different recipes of this in a hope to be able to cook this to perfection one day!

Step-by-Step Tutorial :


Melt 4 tablespoons of butter in a pan over medium heat, add the breadcrumbs & chives.

Stir to combine until they're toasted. Set aside.

Prepare the roasted garlic (recipe can be found here).

Mash the roasted garlic, set aside.

Cook the pasta according to the packaging instruction until al-dente, drained & reserve the pasta water. Set aside.

Melt 8 tablespoons of butter over a large pot over medium low heat.

Add in the flour & mashed roasted garlic.

Stir constantly, for about 3 minutes, until it turns golden in color.

Add in the milk & bring it to a boil, then turn to low heat & let it simmer for 3 minutes, stirring constantly to prevent burning.

Stir in the grated parmesan & cheddar cheese, mustard powder, until well combined.
Season with salt & pepper if needed.

Add in the pasta & 1/2 cup of pasta reserved water.

Stir to combine.

Transfer the pasta to a buttered oven safe baking dish.

Top with the crumb topping.

Bake in the preheated oven for 20-25 minutes or until it's golden brown or bubbling.

Serve immediately! Enjoy!

Ingredients :
For Crumb Topping :
4 tablespoons unsalted butter
2 cups bread crumbs (for homemade breadcrumb recipe click here)
3 tablespoons chopped chives

For Pasta & Sauce :
1 roasted garlic (recipe can be found here)
1 packet of macaroni pasta
8 tablespoons unsalted butter
6 tablespoons sifted all-purpose flour
5 cups milk
5 1/2 cups grated cheddar cheese
1/2 grated Parmesan cheese
1/2 teaspoon ground mustard powder
Seasoning : salt & pepper, to taste

Directions :
  1. Preheat the oven to 200C.
