Caramelized Onion & Mushroom Pasta


Caramelized onion & mushroom is such a great combination & they go well with just about any dishes, almost.

I have previously cooked these Caramelized Onion & Mushroom Tarts & they taste amazing. I'm so in love with these & today I'm cooking the same thing again for my pasta.

I added in bayleaf when I simmer the onion & mushroom with the stocks this time & it brings out the flavor even more, yumms...

These are so simple & easy to make, I'm definitely gonna make this again soon, next time, I want to have my favorite sinful bacon in it too.


Step-by-Step Tutorial :

Melt the butter.

Saute the onions on the lowest heat, stirring constantly, for about 15-20 minutes, until the onions are caramelized.

Add in the garlic & saute for a minute or so, until it's fragrant & aromatic, do not brown.

Add in the mushrooms, stirring constantly until they're soft, about 5 minutes.

Add in the thyme & give it a quick stir.

Add the stock & bayleaf, bring to a boil, & let it simmer until all the liquid has been absorbed.

Remove the bayleaf when it's done.

Transfer them to the pasta.

Add in the fresh/ dried parsley. Use a tongs & give a quick stir, until well combined.

Garnish with scallions or fresh parsley as preferred.

Serves 2-3
Ingredients :
1/2 pack of pasta of your choice, cook till al-dente
1 box button mushrooms, sliced
2-3 big onions
2-3 cloves garlic, finely chopped
1 tablespoon butter
1 bayleaf
1 tablespoons fresh/ dried thyme
1 cup chicken/ beef/ vegetable stocks
1-2 tablespoons fresh/ dried parsley
Spring onion, to garnish

 Directions :
  1. Cook the pasta until al-dente.
  2. Melt the butter.
