Mushroom & Spinach One-Pot-Pasta


Before the year of 2014 ends, I would like to share a simple pasta recipe.

This is a very simple & easy one-pot-pasta meal which was pretty hit just a while ago, maybe still is. I'm not a big fan of tomato based pasta, so I modified the ingredients a little bit & make it non tomato based.

The pasta came out tasty, & to my surprise it actually tastes a lot like Chinese pan-mee, all I needed was crispy fried anchovies & it would look really like one.

The kids love it & have 2 servings each, nothing makes me happier than having my kids enjoy the food I prepared for them.

Easy to cook & prepared by busy mom, or dad, preparation takes less than 10 minutes, & another 6-10 minutes of cook time & you'll have this served on the dining table. Enjoy!

* Step-by-Step Cooking Tutorial *

Place the uncooked pasta, onions, garlic, mushrooms & parsley into the pot.

Cover the pasta with just enough water.

Cook the pasta on the stove on high heat, turn down the flame once it boils.

Simmer for another 6-8 minutes until the pasta is soft, or the liquid has been absorbed.

Add in the spinach & cook for another 1-2 minutes.

Season with salt & pepper.

It tastes just like Chinese pan mee & it's really good.

The kiddos enjoy the meal so much they both asked for second helping.

Ingredients :
A pack of pasta of your choice (I used fettuccine) 

2 large onions, thinly sliced
4-5 cloves garlic, finely chopped
1-2 teaspoons dried/ freshly chopped parsley
250gm button mushrooms, thinly sliced
Spinach, amount as preferred
Water, just enough to cover the pasta
Seasoning - salt & pepper to taste.

Directions : 
  1. Place the uncooked pasta, onions, garlic, mushrooms & parsley into the pot.
  2. Cover the pasta with just enough water.
  3. Cook the pasta on the stove on high heat, turn down the flame once it boils, simmer for another 6-8 minutes until the pasta is soft, or the liquid has been absorbed.
  4. Add in the spinach & cook for another 1-2 minutes.
  5. Season with salt & pepper. 
  6. Best to serve warm.
