Chinese New Year Cookies - Almond Brittle with Pumpkin, Sunflower & Sesame Seeds ~ 麦芽杏仁饼


This almond brittle is 1 of the common CNY cookies that most of my friends are making this year, because it's so easy to make & so irresistible to stop eating. 

By using the Bienetta or Florenta flour, it just makes it so easy to bake these cookies. You no longer have to go through all the cooking with sugar or maltose over the stove anymore, just mix everything up & pop into the oven & they'll be ready in less than 20 minutes. How easy!! And I heard it's not exactly cheap to buy these in the market.

 The best part is, you can freely put in any nuts that you like, & the ratio of each according to your preference.




~ Step-by-Step Tutorial ~

A combine of 200-230gm of all the said ingredients, amount of each as preferred & 100gm of Bienetta or Florenta flour.

Combine all the ingredients together in a bowl.

Pour the mixture on a lined parchment baking dish, spread evenly.

Bake in the preheated oven for 10-15 minutes, or until the mixture stop bubbling & is golden in color.

Let cool slightly for around 2-3 minutes on a wire rack.
Slice with a knife/ pizza cutter when the nuts are slightly harden up, you have to do this step quick otherwise it will be really difficult to cut them in a nice shape.

Let cool completely before removing from the parchment paper.
Store in an air tight container, enjoy!

Ingredients :
Almond flakes

Pumpkin seeds
Sunflower seeds
Black sesame seeds
White sesame seeds
(A total of 200-230gm of the above ingredients, amount of each as preferred)

  2. Combine all the ingredients together in a bowl.
  3. Pour the mixture on a lined parchment baking dish, spread evenly.
  4. Bake in the preheated oven for 10-15 minutes, or until the mixture stop bubbling & is golden in color.
  5. Let cool slightly for around 2-3 minutes on a wire rack.
