Gula Malacca Butter Cake


One morning, I woke up to a craving for gula Malacca butter cake, I watched the baby sleeping soundly next to me & was really glad that it seemed like a good time in baking one for our breakfast.

I went down to the kitchen to see if I have all the ingredients I need to bake one & thankfully, I have all of them!

Immediately I'm starting on baking the cake, the fragrance of the gula Malacca & coconut milk filled up my kitchen entirely while the cake was baking in the oven, my whole kitchen smells so heavenly! 

I can't wait to take a bite of that cake already!!!!



~ Step-by-Step Tutorial ~

Coarsely chop the gula malacca

Beat the egg whites with the sugar until stiff peak, set aside.

In a separate bowl, beat the gula Malacca & the butter on medium speed, until light & fluffy.

Add in the egg yolk 1 by 1, make sure they're well combined after each addition.

Add in the vanilla essence.

Fold in the dry ingredients (flour, salt, & baking powder) & alternate with coconut milk by 3 batches.

Fold in the dry ingredients (flour, salt, & baking powder) & alternate with coconut milk by 3 batches.

Gently fold in 1/3 meringue (egg whites) into the batter.

Mix well

Next, fold in all the remaining meringue into the batter & pour into a greased & lined baking tin.

Bake in the preheated oven for 40-50 minutes, or until a skewer comes out clean in the middle of the cake.


Gula Malacca Butter Cake

Ingredients :
250gm unsalted butter, cubed

200gm gula Malacca, coarsely chopped (adjust accordingly)
30gm sugar (adjust accordingly)
150ml coconut milk
4 large eggs, separated
250gm cake flour, sifted
1/4 teaspoon salt
1 teaspoon baking powder
1 teaspoon vanilla essence

Directions :
  1. Pre-heat the oven to 170C.
  2. Beat the egg whites with the sugar until stiff peak, set aside.
  3. In a separate bowl, beat the gula Malacca & the butter on medium speed, until light & fluffy.
  4. Add in the egg yolk 1 by 1, make sure they're well combined after each addition.
  5. Add in the vanilla essence.
  6. Fold in the dry ingredients (flour, salt, & baking powder) & alternate with coconut milk by 3 batches. 
  7. Gently fold in 1/3 meringue (egg whites) into the batter, mix well.
  8. Next, fold in all the remaining meringue into the batter & pour into a greased & lined baking tin.
