Mini Eggless Cupcakes


I've been using my air-fryer quite a lot lately, except from cooking our dinner using it, I also air-fry some easy snack, like fries, chips, dumplings & all in it. 

Tonight, I wanted to bake cupcakes with it.

This is a very easy & simple cupcakes recipe, no electric mixer is required, all you need to do is just to whisk by hand, ingredients are simple as well, you'll definitely have them inside your kitchen.

Another plus point - it's an egg-less recipe!!!!!

This recipe can be used to bake using the normal size muffin cups as well, just adjust the baking time accordingly. They can also be baked using the traditional way, to bake with the oven. But it's just so easy to bake with the air-fryer, they're done in just 5 minutes, & the smell that fill the kitchen while they were baking away, hmmmm..... oh-so heavenly!



* Step-by-Step Tutorial *

Combine all the dry ingredients in a big bowl, make a well in the middle.
Add in all the wet ingredients in the middle of the dry ingredients.
Gently combine all dry & wet ingredients together.
Pre-heat the air-fryer to 200C.
Use a small spoon to scoop the batter to the mini muffin cup & place in the air-fryer basket.

Optional : you may decorate the top by sprinkle some chocolate chips, nuts, color rice.

Lower down the heat to 180C & bake for 4-5 minutes.

The cupcakes are done if a toothpick inserted in the middle come out clean.


Mini Egg-less Cupcakes

 
Ingredients :  
-Dry Ingredients-
2 & 1/2 cups cake flour

1/2 cup castor sugar
1 & 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon orange / lemon zest
-Wet Ingredients-
1 cup milk

3/4 cup orange/ lemon juice (preferably freshly juiced)
1/2 cup vegetable oil/ melted butter
1 tablespoon apple cider vinegar
1 tablespoon vanilla essence
-Decorating-
Chocolate chips, rice, sprinkles, nuts
 
Directions :
  1. Combine all the dry ingredients in a big bowl, make a well in the middle.
  2. Add in all the wet ingredients in the middle of the dry ingredients.
  3. Gently combine all dry & wet ingredients together.
  4. Pre-heat the air-fryer to 200C.
